The school offers different course possibilities:

  • professional forestry and agricultural courses for the management and enhancement of local agricultural products (Caluso)

  • technical course with specialization in viticulture and enology (Caluso)

  • professional food and wine courses, with specializations in cooking and dining both in Caluso and in Chivasso

The institute owns a small estate in Caluso with tunnel and open-field vegetable cultivation, some parcels with cereals, and two vineyards. One vineyard is next to the school, in the plains, the other on the morainic hill, in an area particularly suited to this cultivation. The cultivated vines are 100% of the Erbaluce vine, with two forms of cultivation: the traditional pergola training system and the more innovative espalier one. The grapes are harvested by the students, some of which are vinified at school, and some are given to the Caluso cooperative cellar of which the Institute is a member. Renowned local wines are produced there: Erbaluce di Caluso DOCG and Caluso Passito DOCG. 
The Caluso school has large chemistry-physics, biology, and computer science laboratories. New cooking, lounge bar, and administration labs were inaugurated in 2022. A new laboratory dedicated to food transformation is being planned.
About 400 students currently attend the Caluso site, half in the agricultural and half in the hotel sector. They are divided into 23 classes (in the 2022/23 academic year).

The Caluso location also features a boarding school with daytime service where students follow study, sports and recreational activities after school hours.

THE LABS

THE CATERING SCHOOL

In 2022 the school opened a new cooking lab, a bar, and a dining room.
